Sohan is a Persian Saffron brittle sweet that is mainly made with wheat and butter and nuts. It is originally from Qom and has two main types, including simple Sohan nad Sohan Loghmeyi.
Mix flour, wheat gound and sugar in a pot and heat them for 3 minutes
Add water and wait until the sugar solves in the water
After the sugar completely solved, add butter
When the butter melted, add honey, salt and cardamom ground
Add saffron
When the combination temperature become 260’C, turn off the heat
Add almonds
Immediately pour the mixture on a porch or an oily tray in small circle shapes. (you can pour a tablespoon at a time)
Sparkle the pistachios as the topping
Wait until they cool down and create a brittle texture

Uniqop’s Advice:
You ‘d better use a cooking thermometer to measure the temperature of the mixture because heating the dough more or less than 260’C is an essential point.
