Soupe Jou

Soupe Jou (chicken barley soup) is a popular starter all over the world. It can also be a light value meal for dinner. It has a range of right ingredients like vegetable and chicken stock which can be very beneficial and useful for children and patients.

Ingredients

  • cups pearl barley, soaked in water for almost 2 hours
  • 4 cups chicken stock
  • 2 cup of water
  • 1 large onion
  • 1 large potato
  • 1 large carrot
  • ½ cup all-purpose flour
  • 2-3 tablespoon lemon juice
  • 2 tablespoon potato paste
  • 1 teaspoon salt
  • ½ teaspoon turmeric
  • 1 tablespoon oil
  • A few chopped parsley and barriers (Zereshk)

Instructions

  • Peel the onion and slice it. Then fry it in the frying pan with a little oil.
  • Grab a large pot and pour 2 cups water and 2 cups chicken stock and add soaked barley and fried to it. Please put it on a medium flame and let it boil and cook.
  •   Meanwhile, it would be best if you prepared its sauce. So take a saucepan and melt the butter in it.
  • Add flour to it and stir until cooking.
  • Add the other half of chicken stock to it little by little and stir it until it mixes well and gets smooth.
  • Let it boil and thicken. After thickening, add tomato paste to it and let it boil for another 5 minutes.
  • Peel carrot and potato and slice them.
  • Check if barley has been cooked well and add slices of carrot and potato to it and let them boil and cook.
  • After cooking all ingredients, add prepared sauce, salt, and turmeric and let it boil for some more minutes to thicken.
  • After that add the lemon juice and allow it to boil just for more five minutes.
  • Pour it into the serving bowl. Decorate the top with chopped parsley and Zereshk.
  • It is ready to serve. Enjoy it.

Notes

Uniqop`s advice

  • You can add some brewed saffron that it influences soup`s color and taste and make it more delicious. But it is a choice depending on your preference.
  • If you want to serve it as a light meal, you can have a piece of bread the size of a palm that makes it more pleasant.
  • Some people like it to be sourer. So you`d better have some lemon juice on the table.
  • If you serve this soup hot, it would be more pleasant.
