Ingredients

  • 1 entire chicken breast
  • 3 cups of Persian or Basmati rice
  • 2 onions
  • 4 tablespoon orange zest
  • 4 tablespoon sliced almond
  • 4 tablespoon sliced pistachio
  • 4 tablespoon barberries
  • 2 carrots
  • cup of rosewater
  • 2 tablespoon vegetable oil
  • ½ cup liquid saffron
  • ½ teaspoon salt
  • 1 teaspoon turmeric
  • 1 teaspoon pepper
  • Sugar to your taste
  • Water

Instructions

  • Start soaking and cooking the rice in Polow style.
  • Cook the chicken with half of an onion and adequate water (about 5 cups)
  • Shred the onions
  • Peel and shred the carrots
  • Soak the sliced nuts and barberries in the rosewater
  • Boil the zests and rinse them for 3 or 4 times to extract their bitterness
  • Shred the chicken after it is cooked
  • Pour the vegetable oil into a pan and saute the onions.
  • Add turmeric
  • Add shredded carrots
  • Add salt and pepper
  • Add chickens
  • After 5 minutes, rinse the soaked nuts and add them.
  • Add saffron
  • Add zest
  • Add three tablespoon sugar
  • Add the barberries and batter the mixture
  • Adjust the sugar to your taste
  • After the rice is softened and you rinsed it mix the sauce with the rice and cook it for 40 minutes on low heat.

Notes

 Uniqop’a Advice:

  • Cover the lid of the pot with a piece of cloth.
  • Use 30 oz butter instead of vegetable oil.
  • Do not stop battering the mixture after you add barberries, because they can quickly burn.
  • You can add saffron and sugar while boiling the zests to help to reduce the bitter taste.
