Koloocheh

To make a delicious homemade Kolooche, you should prepare the dough at first. Meanwhile, the dough is resting; you can make the fillings. After that, you can place the filling on the separated circle dough and enclose them. After decorating the surface of cookies, you can put the tray in the preheated oven and bake then in 400F for almost 30 minutes. After the cookies turn to a golden brown, you can take out the plate and let them cool down.

Ingredients

Dough

  • cups all-purpose flour
  • teaspoon baking powder
  • teaspoon baking soda
  • cup unsalted butter
  • 1 teaspoon brewed saffron
  • ¾ cup boiling water
  • 1 egg yolk

Filling

  • ½ cup all-purpose flour
  • 2 tablespoons unsalted butter
  • ½  sugar
  • ½ vanilla
  • ¼ teaspoon cardamom powder
  • 1 teaspoon cinnamon powder
  • 1 cup of crushed walnut
  • Toping
  • 1 egg yolk

Instructions

Dough

  • Sift the flour.
  • Add baking powder and baking soda to sifted flour and mix well.
  • Add butter, brewed saffron, and yolk and blend them.
  • Add boiling water little by little as you are blending the mixture until first dough forms.
  • Knead the dough for 20 minutes. Then cover it with a piece of plastic and let it rest and rise for 20 minutes.

Filling

  • Mix flour, cinnamon powder, and cardamom powder together.
  • Grab another bowl and mix butter, sugar, vanilla and blend them until the cream forms.
  • Add dry ingredients plus crushed walnut to the butter mixture.
  • Mix them well until you have a smooth combination.
  • Your filling is ready.

Making cookies

  • Pull off small dough ball from the main dough.
  • Place them on a rolling pinboard and roll them up.
  • Put one tablespoon of filling in the middle of the rolled-up dough.
  • Enclose the dough and seal the filling well to stop them coming out during the baking process.
  • Put the sealed dough on the parchment sheet that you have laid on the baking tray.
  • Decorate the surface of the prepared cookies how you like.
  • Garnish the surface of them with egg yolk by using a brush.
  • Preheat the oven until 400F.
  • Put the cookie`s tray in the oven.
  • Bake them for 30 minutes until their color change to a golden brown.
  • Put the plate out of the oven and let the cookies cool down for some minutes.

Notes

Uniqop’s advice

  • You should know that you need to put the butter out of the refrigerator and let it be at room temperature for some minutes before adding it to the mixture.
  • You can add some sesame to your recipe to top and decorate your cookies more.
  • You can store them in an airtight container for future days.
