Shirini Keshmeshi

Shirini Keshmeshi (Persian raisin cookies) is a traditional Persian cookie. To cook it, you need flour, sugar, raisins, and rosewater. It is an excellent choice as a dessert or in hosting parties.

  • 1 cup of butter, melted
  • 1 teaspoon vanilla
  • ½ teaspoon rosewater (Golab)
  • ¾ cup of sugar
  • 4 eggs
  • cup flour
  • 2 cup sraisin (regular size of raisins would be more suitable than jumbo ones)


  • Turn on the oven and preheat it at 150C.
  • Grab a bowl and combine the butter, vanilla, sugar, and rosewater in it.
  • And the eggs one by one and mix them until you have a smooth dough.
  • Fold in your raisin.
  • Pout in your flour a bit at a time.
  • Refrigerate your prepared dough for at least 15 min.
  • Scoop the dough and make some small balls. The size of a ping-pong ball is suitable.
  • Put your dough balls on the cookie sheet with wax paper.
  • Place them on the tray with plenty of room between them because they will spread out a lot.
  • Bake them for 15-20 minutes and check them if they are golden brown on edge.
  • Take them out of the oven.
  • Let them cool for almost 10 minutes.
  • Remove them from the cookie sheet.
  • Serve your cookies and enjoy them.


Uniqop`s advice

  • You can make some changes in the color of the cookies by adding some brewed saffron and make a golden yellow color.
  • The dough of Shirini Keshmeshi would surlily spread out a bit. So make sure you leave enough room between them when you drop the spoon of them on the cookie sheet.
  • You can use margarine instead of unsalted butter. But never use vegetable or coconut oil because those kinds of oil, change the texture and taste of the cookies.
  • If you want to store some of these cookies, put them in an airtight container in a dry and cool place. You can keep them for three days without staling with this keeping method.
  • Don`t forget that Serving a cup of fresh brewed Persian tea of a cup of milk or cocoa milk along with this cookie makes it more and more pleasant in the evening.
