Baghali Ghatogh is a famous Persian dish from the north of Iran. You need fava or lima beans, dill, garlic, and eggs to cook it, Iranians serve it as a stew with a dish of rice.

Ingredients

  • 4  cups of cleaned and sliced fava or lima beans
  • 4 tablespoon dried dill
  • 4 eggs
  • 5 tablespoon mashed garlic
  • oz butter
  • 2  teaspoon turmeric
  • ½  teaspoon peppers
  • ½  teaspoon salt
  • 3  cups water
  • 1 tablespoon vegetable oil

Instructions

  • Saute garlic with oil but do not fry it
  • After 5 minutes add the sliced beans
  • Add spices and mix it well
  • After 5 minutes add water and butter
  • Cover the pot with a lid
  • Add dills after 20 minutes
  • Add eggs at the end and let them fry to your taste

Notes

Uniqop’s advice:

Serve your stew with a dish of Kateh for a more delightful taste.
Fava beans are better than lima beans since they have a more similar taste to the Persian Pach Baghala.
For a better appearance, you can fry the eggs separately and install them on your stew while serving.
For a better scent, you cand add 2 tablespoons brewed liquid saffron while adding other spices.
