Barbari is a traditional, delicious Persian bread. Iranians usually serve it at breakfast tables along with cheese. To make Barbari, you need flour, baking soda, sugar, oil, and water.

  • 3 cups of flour
  • 1 teaspoon sugar
  • 2 teaspoon salt (kosher)
  • 1 teaspoon baking soda (optional)
  • 3 tablespoon vegetable oil
  • 2 teaspoon active yeast
  • Warm water
  • Sesame seeds
  • ½ teaspoon Flour treatment agent (optional)


  • Grab a bowl; mix sugar, salt, baking soda, and yeast with flour. (add the agent here)
  • Add water the mixture, until it makes a pate that doesn’t stick to your hands.
  • Knead the dough well for 5 minutes.
  •   Add oil
  • Knead the dough again for 5 more minutes
  • Let the dough rest in the fridge for 1.5 hours
  • Separate a feast size of the dough, and flatten it with a roller
  • Pour some oil and flour in the bottom of oven’s tray and place it there
  • Sparkle sesame seeds on bread
  • Bake it dor 20-30 minutes


Uniqop’s advice:

  • Make a mixture of yolk, baking soda, and a pinch of saffron and brush the top of the bread with it; for a better appearance and taste.
  • After mixing yeast, let it rest for 5 minutes to help yeast perform better.
  • For a Persian bakery like Barbari, you need to use baking soda.
  • For more nutrition, you can add wheat bran grind along with the flour.
