Tahchin is a very delicious Persian rice dish (some how like a rice cake). Tahchin e Morgh is the most popular made by chicken, yogurt and eggs.

  • 2.5 cup Persian rice or basmati rice
  • 2 lb chicken thighs (you can use breasts, but you should cut it into small cubes)
  • 2 tablespoon Greek yogurt
  • 3 eggs
  • cup brewed liquid saffron
  • ½ cup melted butter or 2 tablespoons vegetable oil
  • 1 onion
  • ½ teaspoon Salt
  • 1 pinch pepper
  • Barberries and sliced pistachio for decorating the dish


  • Soak and prepare the rice in Polow style cooking.
  • Cook the chicken with water and diced onion.
  • Add some cinnamon or bell peppers to reduce the chicken’s stink while cooking .
  • After your rice is boiled and you rinsed it.
  • Batter eggs in a bowl.
  • Add half of the saffron to the eggs.
  • Add ⅔ butter .
  • batter the yogurt and add it to the composition.
  • Add salt and pepper.
  • Pour the rest of butter into a pan.
  • Mix the rest of saffron with butter in the pan.
  •  Pour the composition inside the bowl into the pan.
  • Mix the rice with the composition.
  • Place chickens inside the rice.
  • After 1 hour of cooking on alow heat, your Tahchin is ready.
  • Flip the food into a dish. (the fried side should be on the top).
  • Decorate it with some barberries and pistachio.


Uniqop’s advice:
  • You can use an oven instead of the stove and cook the food in the serving dish.
  • Using only yolks instead of entire eggs results in a hollower texture.
  • If you are using thighs or drumsticks of chicken, there is no need to cut. Place them inside the rice.
  • Using a low heat lets your Tahchin cook well along with frying.
