Borani Kadoo Recipe

Borani Kadoo (بورانی کدو) is the most cooked member of Boranis in Persian cuisine. Iranians make and serve Boranis as an appetizer. However, Borani Kadoo is an unofficial dish which is cooked and served as the main course. Compared to other Boranis it has more ingredients number wisely. Iranians have named this food Borani because of their ancient queen Booran. Borani Kadoo is one of the vegetarian dishes in Persian cuisine. Iranians serve it with Lavash, Sangak, Taftoon, or any other flatbread. Kadoo is the Persian term for zucchini, and Borani is the name of the dish which is made with vegetables. The common ingredient among all Boranis is garlic. Borani is not an official food, and you cannot find it in restaurants. How to cook Borani Kadoo?
To cook Borani Kadoo, you need to wash and peel the zucchinis. Then slice the zucchinis in thinly circles and chop or cube the skin in small pieces. Peel and slice the onions and potatoes in circles. Ingredients
- 4 average zucchinis
- 3 small potatoes
- 2 firm tomatoes
- 1 garlic(entirely)
- 2 tablespoon vegetable oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon cinnamon ground
- 1 tablespoon tomato paste
- 2 tablespoon brewed saffron
Instructions
- Wash and peel the zucchinis
- Chop the zucchinis’ skin
- Slice the zucchini in thin circles
- Wash and peel the potatoes
- Slice the potatoes in circles
- Separate the garlic cloves
- Pour vegetable oil into a pan
- Place the potatoes
- Place the zucchinis on top of the potatoes
- Place the zucchini skins
- Add garlic
- Add tomato paste and spices
- Cook it for 40 minutes on low heat
